Hi Moms. These recipes are as easy as they are delicious. All the main ingredients are on sale this week. Enjoy!

Watermelon Lemonade

 

Serves: 4

1½ pounds sliced seedless watermelon, rind removed

Zest of 1 lemon

3/4 cup freshly squeezed lemon juice

1/2 cup honey or to taste

1½ cups cold water

1 lemon, sliced thin for garnish

 

In a food processor, puree the watermelon until very smooth. Set a mesh strainer over a bowl and pour the pureed watermelon through it. Stir the pulp to let as much liquid as possible drain into the bowl. Discard pulp.

 

Pour the watermelon juice into a large pitcher and add the lemon zest. Set aside.

In a small bowl, whisk together the lemon juice and honey until honey dissolves. Stir this mixture into the watermelon juice, then stir in the water.

Cover and refrigerate until very cold. Serve over ice and garnish with lemon slices.

Apricot Chicken Salad Sandwiches

From: Campbell's Kitchen

Prep: 15 minutes

Serves: 2

Ingredients

2/3 cup chopped cooked chicken breast
1 medium green onion, chopped (about 2 tablespoons)
4 dried apricots, finely chopped
3 tbsp. apricot preserves
2 tbsp. nonfat mayonnaise
2 tsp. chopped fresh parsley (optional)
4 slices Whole Wheat Bread
Lettuce leaves

Directions

Stir the chicken, green onions, apricots, preserves, mayonnaise and parsley in a medium bowl.

Divide the lettuce and the chicken salad between the bread slices.

Fresh Corn Salad

 

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

 

In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.

Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Hi Moms. Sorry it has taken me so long to post but I've been clipping coupons! Did you catch the Walgreens insert in Sunday's paper? If not, get to the recycle bin or the store. The coupon bounty is a good one. Here's what I clipped: Pure American spring water 2-15 bottle packs for $5; Planter's trail mix 99-cents; Reynolds Wrap aluminum foil 89-cents; Cottonelle fresh wipes $1.99; Vanish Drop-ins 2/$1.69; Softsoap liquid for 99-cents and, lastly, Stouffer's frozen Mac & cheese 2/$3.

Another surprise in the Sunday Bee: A Walmart ad. You've got to pay attention when Walmart slips an ad into the paper because they do so infrequently. This week's offerings include pre-made Sam's Choice frozen hamburgers (six 1/3-pound patties for $6) and the buns (including Sara Lee) for $1.68. Fresh pork backribs are $3.37 a pound and Oscar Mayer weiners are 2/$3. A 5-pound pack of boneless, skinless chicken breasts is $13.98 and ears of corn are 3/99-cents. On the flip side, there's Arrowhead spring water for $3.88 a case; 12-pack of Gatorade or G2 for $4.98 and Kraft singles for the burgers at $2.98. Fresh cantaloupe is $1.28. Dreyer's Ice Cream is 2/$6 and bakery cookies are 2 packs for $5.

Hi Moms. How about a great cake recipe that the kids will like - even though it's loaded with zucchini? You can get zucchini for $1 a pound at Raley's and Safeway. And don't worry, the secret ingredient won't scare off the kids because it tastes so good!

Chocolate Zucchini Cake
Bon Appétit
November 1995
The zucchini helps keep the cake moist.
Serves 12
Ingredients
2 ¼ cups sifted all purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups sugar
½ cup (1 stick) unsalted butter, room temperature
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
2 cups grated unpeeled zucchini (about 2 1/2 medium)
1 6-ounce package (about 1 cup) semisweet chocolate chips
¾ cup chopped walnuts
Preparation
 
Preheat oven to 325°F. Butter and flour 13 x 9 x 2-inch baking pan. Sift flour, cocoa powder, baking soda and salt into medium bowl. Beat sugar, butter and oil in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Beat in vanilla extract. Mix in dry ingredients alternately with buttermilk in 3 additions each. Mix in grated zucchini. Pour batter into prepared pan. Sprinkle chocolate chips and nuts over.
Bake cake until tester inserted into center comes out clean, about 50 minutes. Cool cake completely in pan.

Safeway is having a cereal sale and if you have a large family, don't let the numbers scare you off. If you like Kellogg's, Post or General Mills, 5 boxes will cost you $2 each. If you like the Safeway or Eating Right brand, it's only $1 a box for 5. And the good news to go along with cereal -  the price of milk is now  $5.49 for two gallons - down from $6.19 just a couple of weeks ago.  Also, the Friday $5 special at Safeway this week is the slow-roasted, whole chicken. It doesn't feed a lot of people, but if you have a family of 3 or 4, you've got a hot meal.

If you live near or shop at the Vic's Market in Folsom, be sure to clip the coupons on the front of the flyer. Eggs are 2 dozen for $3 and Arrowhead bottled water is $2.99 for a case.

If you need produce, Raley's/BelAir has a 10 pounds  for $10 sale. It includes peaches, oranges, pears, bagged mini carrots, cucumbers, bell pepper and zucchini.

SaveMart has Bohemian hearth breads for $2 a loaf; Sunny Select apple juice at 2/$3; peanut butter 2/$4; avocado and mango for $1 each and berries 2/$5.

Hi Moms. Hope you didn't already recycle the Sunday inserts. If you did, retrieve, retrieve! There are some great prices on back to school supplies at Longs, Walgreens and RiteAid.  Here's the skinny:

Walgreens has dozens of 39-cent coupons. Everything from pencils and filler paper to writing tablets and Sharpie pens. Legal pads are 2/$1; three subject notebooks are 99-cents; Fiskars Scissors are BOGO and highlighters are 4/$1. Disney-themed pencils are 2 packs/$1 and Paper Mate pencils and pens are also 39-cents each.

If you live closer to a RiteAid, check out the BOGO backpacks and lunch boxes. They also have good prices on pencils, pens, glue and colored pencils and crayons.

School supply savings at Longs include a BOGO coupon for Crayola markers or  pencils. They have another coupon that's buy one, get two free on notebooks or filler paper. Markers and highlighters also are BOGO.

Hi Moms. Sorry I haven't posted until now; it's been a busy, busy week. But not to worry. There's plenty of good stuff on sale and I've also included a blueberry recipe. There are three other recipes (2 for green beans and one for tomatoes) on my blog on sacbee.com.

If you like grapes, you're in luck. They are available everywhere.

Kellogg's cereals are a real deal.

It's tomato time with vine ripened and heirloom varities.

And, lastly, ribs are reasonable. You've go to check out The Bee's Gwen Schoen demonstrating the proper way to trim and season ribs on videos.sacbee.com.

Here are the highlights:

Raley's/Belair has the deal on seedless grapes at 99-cents a pound. They also have melon on sale for 37-cents a pound. Once you see Gwen's video you won't be able to resist the ribs, which are $1.99 lb. Boneless, skinless chicken breasts are $1.69 lb. Go back and get the recipe for Lemon Basil Chicken that was in the Thursday blog. I tried it on Saturday and it was excellent. Also at Raley's/Belair, tri-tip for $3.97lb. To compliment your meal, grab a fresh baguette from the bakery for 99-cents. On the cereal front, Kellogg's varities are $4 off when you buy four boxes. That's $1.50 each. Michelina's frozen meals are 79-cents each and Barilla Pasta is $1 a bpx. Try the new mini pasta varities. They work in pasta salads. In produce, you'll find heirloom tomatoes for $2.97lb; limes at 5/$1 and zucchini for 99-cents a pound. And if you're shopping Raley's/BelAir, be sure to check out the milk prices. Last Saturday, I got 2 gallons of Bayview Fat Free for $4.29, a dollar cheaper than the previous week.

SaveMart has back-to-school lunch in mind with Chicken of the Sea tuna for $1 a can and red seedless grapes, also 99-cents a pound. Sunnyside farms bread is 3/$5 and Sunny Select bottled water is $3.50 a case. Quaker granola bars are buy 2, get 2 free. Whole watermelon is $3.99; jumbo cantaloupe 2/$3 and berries are still plentiful. Raspberries are $3.99 for 12 oz; blueberries are $3.99 for 18oz. Tomatoes ont he vine ar $1.69 and the radish/green onion/cilantro trio is 49-cents each.Savenart also has ribs on sale for $1.99lb and those Michelina's frozen meals for 79-cents.

Safeway is the only supermarket that continues to BOGO (buy one, get one free). You can find BOGO savings on Foster Farms chicken breasts or chicken tenders; Farmland hickory smoked bacon; Tropicana juices; Ritz crackers or Chips Ahoy!; Trans Ocean imitation crab; Lucerne large eggs (18-count); Safeway Select ice cream and Hefty one zip storage bags. In regular grocery stuff, Safeway has blueberries $5.99 for 2.5lbs; tomatoes on the vine $1.77lb; green beans for 99-cents a pound and red bell pepper 2lbs/$3. Seedless grapes are $1.99 for a 2lb bag and Kellogg's cereals for $1.50 each with coupon. Depending on your choice of sandwich bread, there's Safeway wheat breads for 99-cents a loaf or whole wheat sliced bread for $1.99. Dasani water is $3.99 a case and Refershe water (the Safeway brand) is $1 a gallon. This week's Friday special is Homestyle Meatloaf. I'm still undecided on this one. But for $5, it's still a bargain and it means no cooking on Friday!

Blueberries continue to be plentiful and reasonable. Here's a recipe that Bee researcher Sheila Kern is sharing. I'm going home tonight to make it for my son! Blueberries are on sale at Safeway $5.99 for a huge, 2.5 pound container.

Blueberry crisp with oatmeal and almond topping

Recipe from Bon Appetit, August 2001

Ingredients

3 half-pint baskets of  fresh blueberries

2 tablespoons plus 1/4 cup (packed) golden brown sugar

1/2 teaspoon ground cinnamon

1/2 cup quick-cooking oats

2 tablespoons all purpose flour

1/4 teaspoon salt

2 tablespoons (1/4 stick) chilled unsalted butter cut into small pieces

1/4 cup sliced almonds

Nonfat vanilla frozen yogurt

Preparation

Preheat oven to 350-degrees. Rinse and drain blueberries, allowing some water to cling to the berries. Place berries in a 9-inch glass pie dish. Sprinkle with 2 tablespoons brown sugar and cinnamon, stir to blend. Let stand until sugar dissolves and coats berries. Stir oats, flour, salt and remaining 1/4 cup brown sugar in medium bowl. Add butter and rub in with fingertips or fork until moist clumps form. Stir in almonds. Sprinkle oat mixture evenly over blueberries. Bake until berries are bubbling and topping is golden, about 35 minutes. Serve warm and top each serving with a spoonful of the frozen yogurt.

Don't know about you, but I liked having Longs around. I shopped there more when I lived in the Bay Area but I've always been a fan. Wouldn't you know that on the day the story runs in the paper announcing "CVS chain to buy Longs Drugs stores" http://www.sacbee.com/103 a full-page add also runs inside the main news section. Once again, there are  good deals to be had. We've been keeping track of egg prices recently, and Longs has a dozen large grade AA for 99-cents! The BOGO offerings are good, too: Mead notebooks, filler paper and Maybelline mascara. Summer items are on sale - with coupons for 40%-50% off flip-flops, picnic products, outdoor furniture and BBQ accessories. Also worth the trip, Longs brand vitamins at 60% off and Sara Lee hot dog or hamburger buns for $1.88 a pack.

There will be more to report when we scan the Sunday ad. After that, who knows?

Here's an interesting item I came across while reading Advertising Age. (I know, why am I reading Advertising Age? Well, they really do have their finger on consumer news.) This comes from Emily Bryson York. Bryson York, reporting from Chicago, says that Safeway is going to roll out its organic line of foods - O Organics - and the healthier brand - Eating Right - to other grocery chains. Bryson York quoted James White, Safeway's senior VP-consumer brands, as saying "There is a significant consumer market for organics" that is not being impacted by the downturn in the economy. The article went on to say that O Organics targets mothers looking for healthier food for their children. Stay tunned to see whether any of our local markets pick up the brand.

Hi Moms. It was great to meet members of the advisory board today. I hope you will all find a few minutes to email me so that we can set up our "Bee" network.

In shopping news this week, there are lots of healthful items on sale. Fruit tops the list  with good prices on grapes, berries, melon and nectarines. Safeway has a great cereal coupon inside their weekly ad. Four boxes of General Mills cereal (Cheerios, Cinnamon Toast Crunch, Lucky Charms) for $6. There's also a similar coupon for Nature Valley granola bars or Betty Crocker Gushers. Raley's/BelAir has strawberries on sale - 2 pounds for $3 (check the Shop Cheap blog for a great strawberry/spinach salad recipe)  and Clif Kid Z Bar 5/$3. I've had the kid version of Clif Bars.They are really good and they 're made with wholesome ingredients. If the kids are heading back to school soon, Raley's also has notebooks, pencils and markers on sale.

If you're a SaveMart shopper, check out  Betty Crocker fruit snacks 2/$4; Sunny Select peanut butter 2/$4 and Sunnyside Farms cracked wheat bread 3/$5. SaveMart also has Bing cherries for $2.99 a pound and grapes for $1.49 a pound.
