Black Bean-Sweet Potato Quesadillas
Who knew that a black bean-sweet potato quesadilla with soy cheese in a brown rice tortilla would be so tasty. In trying to avoid wheat, eliminate dairy, and create new food choices for dinner, this was the evenings entree. After one bite, Lucas and Brodie didn't want anything to do with it. In fact, they decided after tasting THAT, they didn't want anything else in their mouths. So dinner consisted of a few grapes, and milk. I ate all the yummy left overs. Now I'm just left with the after dinner mess, which is much worse on a night that the kids decide not to eat because most of their food ends up on them, their highchairs, and the floor, rather than in their mouths.
